Get Every Last Drop of Juice Out of a Lime with this Technique

There are many ways to squeeze the juices from fruits, but the structure of limes are a little different than lemons and other citrus fruits. This easy method gives new meaning to "a twist of lime."

Chef Heidi Fink believes fresh lime is always the best way to go, and demonstrates this lime juicing method on her blog Lip Smacking . All you need is a paring knife, a bowl, and a lime.

  1. Make one cut through the lime lengthwise, the stem and the business end of the knife pointing the same direction away from you. The cut should be made just to the right side of the stem.
  2. Now lay the lime on its rind with the juicy insides facing up, stem still facing away. Make the same cut, just to the right of the stem again.
  3. Now rotate the lime so the stem is facing you and make the same cut just to the right side of the stem again. You should have five pieces of lime: four oval-ish pieces and a lime core.

Squeeze the four oval-ish pieces normally by squeezing their ends together and capture all of the juice into the bowl. Now, the best part: hold the lime core above the bowl and twist as if you were ringing out a wet rag. Cutting the lime this way is easy and helps you get the most juice you can out of the fruit.
